Sofrito from Corfu
This is a traditional recipe from Corfu, the beautiful island of the Ionian sea.
Eggplants papoutsakia stuffed with vegetable puree
If you are following an alkaline diet based on vegetables, pulses and fruits you can try mixing eggplants with vegetable mash. This recipe does not have any sugar, meat, egg, flour.
Garlic Sauce
Used in fried fish like in fried cod dish. Also served as a side dish together with beetroot salad. It has many variations around Greece. In the Ionian islands they use potato instead of breadcrumb and they call it “Aliatha”.
Fried sole with white ouzo sauce
Instead of pouring a butter sauce on top of the sole fillets with mixed some mayonnaise with ouzo, lemon and dill.
Burgers with quaker oats served with baked potatoes
Juicy and aromatic burgers, served with baked potatoes. Instead of hard tack or stale bread with mixed the minced meat with quaker oats.
Boiled potatoes with milk, onion and garlic
This is a dish up of some remaining food ingredients, leftovers in the fridge.
Shi drum fish plaki
Plaki can be done with swordfish fillets as well. Shi drum is less salty than swordfish and has a mild taste.
