Rice from Sfakia – Crete


  1. Cook the meat and keep its broth (measure 3 cups of stock for each cup of rice).
  2. Cook the rice in the broth.
  3. When it is half cooked add the lemon juice.
  4. Remove from fire, melt the butter and pour it over the rice.

  • 1 kg of meat (combine chicken and lamb) only used for taking the broth. If you already have it you do not need the meat.
  • 1 kg rice
  • 1 cup fresh goat’s butter
  • 1 glass lemon juice
  • Salt
