Rice from Sfakia – Crete
Directions
- Cook the meat and keep its broth (measure 3 cups of stock for each cup of rice).
- Cook the rice in the broth.
- When it is half cooked add the lemon juice.
- Remove from fire, melt the butter and pour it over the rice.

Ingredients
- 1 kg of meat (combine chicken and lamb) only used for taking the broth. If you already have it you do not need the meat.
- 1 kg rice
- 1 cup fresh goat’s butter
- 1 glass lemon juice
- Salt
