Onion and cheese omelete


  1. Heat the oil in a frying pan and add the onions. Lower the heat and fry onions until golden.
  2. Beat in a bowl the eggs with the pepper for 5 minutes.
  3. Add half of the egg mixture in the frying pan.
  4. Mix the rest of the egg mixture with the mitzihtra cheese and add in the frying pan.
  5. Stir the mixture and let be cooked. When it is done, turn it upside down to be cooked both sides. Serve with toasted bread.


  • 10 medium onions, cut in round slices
  • 8 eggs
  • 1 tea cup grated dry mitzithra cheese (similar to feta in texture, unsalted,
    and made with a combination of whey; full fat milks and creams)
  • Pepper
  • Salt if desired
  • 1/2 tea cup olive oil
