Directions

  1. Fry the potatoes in the pork’s fat.
  2. In another large frying pan fry the sausages in their own fat.
  3. Add pork pieces or bacon and fry on all sides.
  4. Beat eggs in a bowl and then mix egg mixture and fried potatoes with the sausages and the pork.
  5. Add salt and pepper, spearmint and let the omelette fry on one side.
  6. When ready turn over to cook on the other side.
  7. Omelette is served hot.

The original “Fourtalia” from Andros is made with local sausages and “louza”, which is smoked pork’s meat. Also the pork’s fat, which is used instead of oil and butter is called “glina” and is used in Andros for cooking and for preserving the country style sausages in it. Therefore, in order to cook the original fourtalia you need original ingredients.

Ingredients

  • 7 eggs
  • 2 country style pork sausages, sliced
  • 4 large potatoes, thinly sliced
  • 2 spoons of pork’s fat (or fresh butter)
  • 4 medium size pieces of boneless pork (or equal number of rashers of bacon) – optional
  • Salt
  • Pepper
  • Spearmint

Apart from “Fourtalia” in Andros they also make “koukofourtalia”, which is the same idea with the only difference that instead of potatoes they add broad beans “koukia”.
