Directions
- Heat the oil in a frying pan and add the onions. Lower the heat and fry onions until golden.
- Beat in a bowl the eggs with the pepper for 5 minutes.
- Add half of the egg mixture in the frying pan.
- Mix the rest of the egg mixture with the mitzihtra cheese and add in the frying pan.
- Stir the mixture and let be cooked. When it is done, turn it upside down to be cooked both sides. Serve with toasted bread.
Ingredients
- 10 medium onions, cut in round slices
- 8 eggs
- 1 tea cup grated dry mitzithra cheese (similar to feta in texture, unsalted,
and made with a combination of whey; full fat milks and creams)
- Pepper
- Salt if desired
- 1/2 tea cup olive oil
