Green beans in tomato sauce demonstration
This post demonstrates the fasolakia recipe.
Step 1: First you have to clean the beans by cutting the stringy edges all around with a sharp knife. (this step is not shown). Then rinse and drain them. Saute the onion in the olive oil in a saucepan and add the mashed tomatoes.
Step 2: Add the beans and saute for a few minutes.
Step 3: Add some potatoes if you like. This step is optional.
Step 4: Add the parsley and the salt and stir. Add some water, cover and cook in low temperature for approximately 45 minutes, until sauce thickens and becomes oily like in the picture.
Step 5: Serve!
