Directions

  1. Salt and pepper the pieces of chicken and fry them gently on all sides.
  2. Remove from frying pan and place them in the clay pot or any heat proof pot you have.
  3. Then add the okra, the tomatoes and all the seasonings.
  4. Stir well, add some more salt and pepper, if required, and finally pour the water.
  5. Bake in 180 C until the okra is tender and most of the meal’s juice has evaporated.
  6. At least 1 hour of baking is required. Serve warm.

Okra must have its stem removed. Due to its slimy texture when cooked, it is better to sprinkle them with vinegar and let them drain in the sun for 1 hour. Sun in Greece is abundant, thank god! This way they will be cooked easier. Frozen okra, can be bought from supermarkets and are cleaned.

Ingredients

  • 1 whole chicken, medium size, cut in servings
  • 750 grams okra, frozen or fresh
  • 1 cup olive oil
  • 1 tspn coriander
  • 1 pinch of saffron
  • 1 tspn of pimento
  • 800 grams tomatoes, cleaned and cut in small cubes
  • 1/2 glass of water
  • Salt
  • Pepper
  • Olive oil for frying the chicken pieces
