Zucchini rissoles from Arkadia


  1. Boil the zucchini until soft and then grate them.
  2. Use a large bowl to mix all ingredients, except of the flour, until they become unified.
  3. Start adding flour gradually until the mixture becomes thick.
  4. Heat oil in a frying pan and drop spoons of mixture in it. Fry on both sides until golden.
  5. Remove from frying pan and place them in an absorbing kitchen paper for a while to absorb any excessive oil.
  6. Serve warm.


  • 1 kg zucchini
  • 3 large onions, cut thinly
  • 1 spoon finely cut spearmint
  • 150 grams grated mitzithra cheese (or any other hard cheese)
  • 1/2 kg feta cheese, crumbled
  • 5 eggs
  • Pepper
  • Flour, as much as it is needed to make a thick pulp.
