Directions
- Boil the zucchini until soft and then grate them.
- Use a large bowl to mix all ingredients, except of the flour, until they become unified.
- Start adding flour gradually until the mixture becomes thick.
- Heat oil in a frying pan and drop spoons of mixture in it. Fry on both sides until golden.
- Remove from frying pan and place them in an absorbing kitchen paper for a while to absorb any excessive oil.
- Serve warm.
Ingredients
- 1 kg zucchini
- 3 large onions, cut thinly
- 1 spoon finely cut spearmint
- 150 grams grated mitzithra cheese (or any other hard cheese)
- 1/2 kg feta cheese, crumbled
- 5 eggs
- Pepper
- Flour, as much as it is needed to make a thick pulp.
