Trahana soup from Agra Lesbos
Directions
- Boil water on a saucepan and dissolve the tomato paste in it.
- Grate the fresh tomato and pour it into the saucepan. Stir
- Empty the trahana cup in the saucepan.
- Add olive oil, sugar, salt and pepper and taste. Fix taste if necessary
- Simmer for 20 minutes
- Serve warm
- Optionally you can melt feta cheese and mix with the soup.
- This is our favorite trahana. It is only sold in Lesvos and cannot be found in big food stores. It is sour in taste and has a strong smell.

- 1 cup trahana (tiny sour dough balls)
- 4 cups water
- 3 spoons concentrated tomato paste
- 1 fresh tomato
- Salt
- Pepper
- 1 spoon sugar
- 3 spoons olive oil
