Sfegato from Kythnos island


  1. Mix in a bowl the crumbled cheese with the rest of the ingredients.
  2. Mould and shape the mixture into balls.
  3. Fry in plenty of oil all around until balls become golden brown.
  4. Serve warm.


  • 1 kg fresh white cheese from kythnos, crumbled
  • 4 eggs
  • 3 – 4 spoons of flour
  • Salt
  • Pepper
  • Oil for frying
