Greek style pizza

For the dough

Ingredients

  • 2 cups of all purpose flour
  • 1 cup of whole grain flour
  • 8 grams drain yeast
  • 1 cup water
  • Salt
  • 1 spoon olive oil

For the Topping

Ingredients

  • 2 spoons tomato paste
  • 2 fresh tomatoes, mashed
  • 1 spoon basil
  • 1 tspn sugar
  • 2 spoons olive oil
  • Salt
  • Pepper
  • 50 grams feta cheese, crumbled
  • 150 grams greek cheese or any mild cheese in taste (we used ladotyri)
  • 6-8 olives, kernel removed and cut in pieces.

For the dough

Directions

  1. Add in a bowl 1 cup lukewarm water and dissolve the yeast on it.
  2. Then add the flour and the rest of the ingredients and mould.
  3. When you have an elastic dough put the dough in bowl and cover with a towel.
  4. Preserve in a warm place and let the dough double its size for 30 minutes.
  5. After 30 minutes mould again and set aside for another hour.

For the Topping

Directions

  1. In the meantime prepare the sauce. Heat olive oil in a sauce pan and pour the tomato paste, the tomato mash and mix.
  2. Add sugar, salt and pepper. Add basil and simmer for 10 minutes.
  3. Set aside and let it cool.

Compilation

Directions

  1. Baste a rectangular baking pan with olive oil and some flour.
  2. Split the dough in two pieces and try to expand it and cover the two halves of the baking pan. Stretch until all the surface is covered.
  3. Empty the tomato sauce on top and spread all over the dough.
  4. Pour the two kinds of cheese (feta and ladotyri or any other mild cheese) on top.
  5. Distribute the olives as well.
  6. Preheat oven in 180 C.
  7. Bake for 15 – 20 minutes depending on the oven.
