Giant black beans salad from Prespes
Directions
- Soak the beans all night.
- The next day rinse them well and boil them in the pressure cooker for at least 30 minutes.
- When they are tender enough drain them and let them cool in a salad bowl.
- Pour olive oil and balsamic vinegar and mix well.
- Add salt and pepper, cumin and curry and mix again.
- Serve in room temperature.
Fresh legumes need more time to soften. Therefore, 30 minutes of boiling might not be enough.

- 300 grams black lima (giant) beans
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
- 1 tspn of fresh cumin seeds (if you cannot find seeds use powder)
- 1 tspn curry
- Salt
- Pepper
