Chick peas with sasage and leeks

Chick peas with country sausage and leeks in crock pot


  1. Soak the chick peas overnight.
  2. Next day boil in pressure cooker for at least 30 minutes until tender.
  3. In the meantime rinse the leeks very thoroughly to remove soil and cut them in thin slices.
  4. Cut the pepper in thin slices as well and do the same also with the tomatoes.
  5. Cut the sausage in thick slices of 2 cm.
  6. Use a frying pan and saute the sausages, the pepper and the leeks until the vegetables become tender. There is no need to add olive oil since the country sausage has enough fat.
  7. Then add the fresh tomatoes and stir. Add the sugar spoon, salt and pepper for taste as well and stir again so that all the ingredients are well mixed.
  8. Add half cup of water used for boiling the chick peas and let the mixture simmer for 5 minutes.
  9. Take a crock pot and pour the chick peas into it. Then pour the mixture and and mix all again. Check if more salt is required.
  10. Bake in 180 C for 45 minutes. Add water if required.


  • 500 grams chick peas
  • 2 long country sausages
  • 2 – 3 leeks
  • 3 fresh tomatoes, mashed or 1 can concentrated tomato paste
  • Salt
  • Red Pepper
  • Paprika
  • 1/2 cup Olive oil
  • 1 spoon sugar
  • 1 spicy red pepper (optional)
