Bean salad


  1. Soak beans in water overnight.
  2. Boil them in salted water and strain them when cooled.
  3. Place them in a platter and cover them with onion rings, pepper, parsley, eggs, tomato and some olives.
  4. Pour oil over the salad and season with pepper.
  5. Sprinkle with vinegar or lemon juice.


  • 1/2 kg dried beans
  • 1 onion, cut in rings
  • 1 pepper, cut in stripes
  • 2 eggs, boiled and cut in pieces
  • 1 tomato, peeled cut in slices and with its seeds removed
  • Spoon of finely cut parley
  • Black olives
  • Pepper
  • Oil
  • Vinegar or lemon juice
