Sardines with vegetables

Baked Sardines with Vegetables


  1. Remove head and scrape the scales from the fish. Wash the fish well.
  2. Cut the potatoes in very thin slices. Baking time of potatoes is significant bigger than the one of fish, therefore you need to cut them in thin slices. Preserve in a bowl full of water while you proceed with the rest of the ingredients.
  3. Cut the carrots in small pieces.
  4. Cut the pepper in thin slices.
  5. Mash the tomatoes and the garlic and mix together.
  6. Take a baking pan and spread the sardines on it. Add all the rest of the ingredients and mix.
  7. Pour olive oil, lemon juice, oregano and season with salt and pepper.
  8. Mix well again.
  9. Bake in preheated oven (180 C) for 45 minutes.
  10. Serve warm.


  • 1 kg sardines
  • 4 large potatoes
  • 2 carrots
  • 1 pepper
  • 1 eggplant (optionally used if you want to add more vegetables)
  • 2 garlic cloves
  • 4 fresh tomatoes
  • Oregano
  • Salt
  • Pepper
  • 1/2 cup olive oil
