Baked cod fillets with potatoes

Directions

  1. Wash the fish fillets well.
  2. Cut the potatoes in thin slices. Preserve them in a bowl full of water while you proceed with the rest of the ingredients. If you do not put them in a bowl of water they will gradually become green. Water is wasted afterwards.
  3. Cut the pepper in thin slices.
  4. Mash the tomatoes and the garlic and mix together.
  5. Cover the surface of the baking pan with a baking sheet.
  6.  Add the fish fillets on the baking pan.
  7. Add all the rest of the ingredients, mix and distribute the mixture in the entire surface of the baking pan.
  8. Pour olive oil, lemon juice and season with salt and pepper.
  9. Bake in preheated oven (180 C) for 45 minutes.
  10. Serve warm.

This is a very fast and easy way to cook cod and to serve it to your kids. Kids are usually reluctant in tasting fish. Parents need to find ways though to offer fish alternatives.
Baking time of potatoes is significant bigger than the one of fish, therefore you need to cut them in thin slices. Prefer using fresh tomatoes, if it is their season

  • 1 kg cod fillets (boneless)
  • 4 large potatoes, thinly sliced
  • 1 1/2 pepper, cut in thin slices (optional)
  • 2-3 garlic cloves, mashed
  • 5 fresh tomatoes, mashed or 1 can tomato puree
  • Juice of half lemon (optional)
  • Salt
  • Pepper
  • 1/2 cup olive oil
