Directions
- Put olive oil in the frying pan and let it burn for a couple of minutes.
- Cut the pepper in small pieces and fry it.
- If using fresh tomatoes chop them as fine as possible and add them.
- Fry until the mixture becomes almost dry.
- Add salt, pepper and the eggs smashed inside the frying pan.
- With a wooden spoon stir for a few minutes.
- Remove the mixture and serve warm.
You can also use onions and even sausages.

- 3 eggs
- 3 fresh tomatoes (alternatively, a can of finely chopped tomatoes)
- olive oil
- 1/2 green pepper
- salt
- pepper
