Giant black beans salad from Prespes

Directions

  1. Soak the beans all night.
  2. The next day rinse them well and boil them in the pressure cooker for at least 30 minutes.
  3. When they are tender enough drain them and let them cool in a salad bowl.
  4. Pour olive oil and balsamic vinegar and mix well.
  5. Add salt and pepper, cumin and curry and mix again.
  6. Serve in room temperature.

Fresh legumes need more time to soften. Therefore, 30 minutes of boiling might not be enough.

 

Ingredients

  • 300 grams black lima (giant) beans
  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1 tspn of fresh cumin seeds (if you cannot find seeds use powder)
  • 1 tspn curry
  • Salt
  • Pepper
