Pasta with tomato carrot salad and greek yogurt
Whole wheat penne with tomato carrot sauce and greek yogurt
For the sauce
Directions
- Mash the tomatoes.
- Grate the carrots.
- Chop the onion finely.
- Heat olive oil in a sauce pan and brown the onion.
- Add the tomato mash, stir and simmer for 5 minutes.
- Add the grated carrots, season with salt, pepper and simmer until sauce thickens and carrots are tender.
For the pasta
Directions
- Follow the boiling directions of the package.
To assemble
Directions
- Serve pasta and sauce warm. Pour sauce on top of pasta.
- Serve one spoon of strained yogurt on the side.

- 4 – 6 fresh tomatoes
- 3 carrots
- 1 large onion
- 3 spoons olive oil
- Strained greek yogurt
- Salt
- Pepper
