Shi drum fish plaki
Directions
- Wash fish fillets and drain. Add salt and pepper on both sides. Put them on a baking pan.
- Add the potato and onion slices on the baking pan.
- Crush the garlic cloves and add them as well.
- Pour wine, olive oil and vinegar on top of the fish and the vegetables.
- Pour tomato paste and spread a layer of tomato slices on top of the fish fillets.
- Add salt, pepper and thyme and sprinkle with parsley.
- Mix gently in order the tomato paste and the olive oil to be evenly spread.
- Bake until the vegetables are tender (the fish needs less time than the vegetables).
- Remove from heat and let the sauce cool a bit in order to thicken.
- Serve fish with vegetables on the side. Pour some sauce on top.
This recipe can be done with swordfish fillets as well.

- 4 shi drum fish fillets
- 4 potatoes, thinly sliced and cut like flat chips
- 2 onions, thickly cut in rings
- 1 fresh tomato, cut in thin slices
- 2 spoons tomato paste
- 2 garlic cloves
- 1 spoon of vinegar
- 2 spoons finely cut parsley
- Salt, Pepper
- Fresh pepper, crushed
- Thyme
- 1/2 wine glass of white wine
- 1/2 cup olive oil
