Piquant mayonnaise

Directions

  1. In a blender beat the egg yolks, the mustard and the sugar. Add gradually and very slowly oil and continue mixing in medium speed (4 from 1- 10).
  2. When the mayonnaise thickens, add pepper and salt.
  3. Finally pour lemon and vinegar and mix again for a while.
  4. Stop the blender, empty the mixture in a bowl and preserve in the fridge for 2-3 hours before you serve it.
  5. It is preserved in the fridge for 3-4 days

  • 2 egg yolks
  • 320 ml olive oil
  • Juice of one lemon
  • 1 tspn vinegar
  • 1 tspn sugar
  • 1 spoon spicy mustard
  • Pinch of salt and pepper
