Piquant mayonnaise
Directions
- In a blender beat the egg yolks, the mustard and the sugar. Add gradually and very slowly oil and continue mixing in medium speed (4 from 1- 10).
- When the mayonnaise thickens, add pepper and salt.
- Finally pour lemon and vinegar and mix again for a while.
- Stop the blender, empty the mixture in a bowl and preserve in the fridge for 2-3 hours before you serve it.
- It is preserved in the fridge for 3-4 days
Ingredients
- 2 egg yolks
- 320 ml olive oil
- Juice of one lemon
- 1 tspn vinegar
- 1 tspn sugar
- 1 spoon spicy mustard
- Pinch of salt and pepper
