Bourani

Bourani is actually rice cooked in tomato sauce. This recipe comes from Smyrna (Izmir) in Asia Minor, with a slight variation. We do not use onions. This is very easy and low cost recipe to prepare.

Directions

  1. Mix on a blender the tomatoes with the garlic the sugar, some salt and some pepper.
  2. Heat the oil on a sauce pan.
  3. Pour the mixture into the sauce pan and simmer for ten minutes.
  4. Pour rice into the mixture, add enough water to boil the rice until it becomes tender and no water is left.
  5. Cook until rice is cooked.
  6. Serve warm and pour parsley over the rice.

Ingredients

  • 1 cup of rice
  • 5 fresh tomatoes
  • 3 garlic cloves
  • 2 spoons of sugar
  • Salt
  • Pepper
  • 1 spoon of finely cut parsley
  • 1/4 cup of olive oil
