Squid with orzo
Directions
- Pour oil in a saucepan or in a pressure cooker and saute the onion, the carrot and the squids.
- Add the garlic, the celery stalk, the wine and the tomatoes and simmer until squids are tender. In the pressure cooker they need only 20 minutes.
- When squids are ready then add the orzo, add one cup of water and simmer until orzo is cooked. Add salt and pepper for taste.
- In the end there should only little juice in the saucepan. If orzo absorbs all the water you need to add more.
- Remove from heat, remove celery stalk and serve squid pieces with orzo on the side.
Ingredients
- 1 kg small squids
- 250 grams orzo
- 1 onion, finely cut
- 1 carrot, cut in small pieces
- 1 parsley stalk
- 1 garlic clove, crushed
- 1/2 wine glass white wine
- 1 tin preserved tomatoes or 3 fresh tomatoes, mashed and 2 spoons tomato paste
- Salt
- Pepper
- 4 spoons olive oil
