  • Discard the crusts from the bread, then squeeze out any excess moisture.
  • In a large bowl, combine all the ingredients by hand.
  • If you have the time, allow the mixture to rest for 30 minutes.
  • Form the mixture into large, round, flattened patties. Grill them under a hot broiler for about 3 minutes per side. Even better, place them on an oiled grill grate and barbecue them for about 5-6 minutes per side, adjusting cook time based on the heat of your fire. The goal is for them to be slightly undercooked and moist in the center. Flip them only once to avoid overcooking or scorching.
  • Serve the burgers immediately with lemon wedges on the side of the platter, alongside a fresh salad.
