Burgers with quaker oats served with baked potatoes

- Pass through the blender one cup of quaker oats.
- Mix in a blender one carrot, one green pepper and one onion together with one spoon of olive oil.
- Beat slightly two eggs and keep aside.
- Mix parsley with dill and oregano and keep in a bowl.
- Mix in a large bowl the minced meat with the puree of vegetables, the eggs and the quaker. Pour the ingredients gradually and mould with your hands until the ingredients are well mixed.
- Add the herbs and mould again.
- Finally add pimento, pepper and lemon zest and mould again.
- Shape the mixture into large thin flat burgers, place them in a platter, cover and keep in the fridge for an hour.
- In the meantime prepare the potatoes. Peel them and cut them in cubes. Boil them for 5 minutes in order to soften.
- Then put them in a baking dish and pour a mixture of olive oil (1/3 cup), salt, pepper, mustard (2 spoons) and one juice of lemon.
- Bake in preheated oven until they take a golden brown color on top.
- Remove from the oven, cover with foil and keep warm.
- Cut the tomatoes in thin slices and put one slice on top of each burger.
- Grill or charcoal the burger on both sides as desired. We prefer them juicy and soft inside.
- Serve with potatoes. Season with salt. We preferred not to add any salt in the mixture.
