  • Remove head and scrape the scales from the fish. Wash the fish well.
  • Cut the potatoes in very thin slices. Baking time of potatoes is significant bigger than the one of fish, therefore you need to cut them in thin slices. Preserve in a bowl full of water while you proceed with the rest of the ingredients.
  • Cut the carrots in small pieces.
  • Cut the pepper in thin slices.
  • Mash the tomatoes and the garlic and mix together.
  • Take a baking pan and spread the sardines on it. Add all the rest of the ingredients and mix.
  • Pour olive oil, lemon juice, oregano and season with salt and pepper.
  • Mix well again.
  • Bake in preheated oven (180 C) for 45 minutes.
  • Serve warm.
