Cinnamon (κανέλα in Greek) is a spice, which is obtained from the inner bark of several trees from the genus Cinnamomum. It is used in sweets and savory foods as well.

Greeks use cinnamon in an assortment of cookies, cakes and fried pastry sweets. They also use it to make roasts and sauces for meat meals.

  • You can either purchase cinnamon sticks or cinnamon powder (ground cinnamon).
  • Ground cinnamon has a tan color. Quills are brown in color and usually between 6 to 8 cm long.
  • When using cinnamon sticks (quills) in cooking, usually after cooking the stick is removed from the saucepan and wasted. It is only used to give an aroma to the food.
  • Use it with caution. In great portions it dominates in the taste of the food.
