Stamnagathi salad

Stamnagathi is a wild weed  (horto) that grows on shrub. It is the favorite horto in Crete, sweet in taste. It requires careful cut from thorny shrubs. It is rare in Attica and grows next to the sea. Directions

  1. Remove soil from the weeds and wash with plenty of water.
  2. Drain them and then boil in salted water for 10 minutes.
  3. Strain the weeds and add them on a platter.
  4. Saute the spring onions and the garlic clove.
  5. Mix them with lemon and olive oil.
  6. Pour the mixture on top of the weeds.

  • 1 kg stamnagathi
  • Juice of 2 lemons
  •  Olive oil
  • Salt
  • 1 spring onion, finely cut
  • 1 garlic clove, finely cut
